I am taking a Master Gardening class through a local university extension that is 3 hours long, one night a week. Each class member signs up to bring snacks at least once. This week it was my turn to bring snacks and our class topic was vegetable gardening. A friend of mine has a cupcake cookbook that had this Garden Cupcakes recipe. I decided to give it a whirl. I also brought a veggie & dip tray and cheese & crackers.
The vegetables are made of M&M's, Fruit Roll-Ups, Starburst, white chocolate melts, Laffy-Taffy, and green icing. I made peas, carrots, turnips, & yellow squash. I frosted each cupcake with chocolate icing then dipped it in Oreo cookie crumbs.
The baby took care of the leftover Oreo's for me. She carefully licked out the creamy centers and tossed the chocolate cookies away. The dog enjoyed a few that she threw on the floor. I think she ate 8 before I stopped her.
